Malbec
The growth of high-quality grapes depends largely on the climate, and our aim was to identify the ideal grape variety that would thrive in our distinctive microclimate. After consultation and thoughtful evaluation, we concluded that cultivating Malbec would be the most suitable choice. Malbec is a variety that can flourish in hot summer days and cool nights, with the potential to ripen fully by early fall.
In The Vineyard
Our Malbec grapes are cultivated using regenerative agriculture techniques that prioritize soil health and fostering biodiversity. By incorporating clover cover crops, we enrich the soil with nitrogen and organic matter while also preventing erosion. Vineyard pests are kept in check by beneficial insects, birds, and sometimes even foxes. Our eco-friendly farming practices yield luscious grape clusters that form the foundation of our exceptional wines.

Wine Growing
Our wines start with grape growing, what we call wine growing.
At our farm, we utilize regenerative agriculture practices that emphasize soil health, cover cropping, water conservation, and pollution prevention. By eschewing tilling and pesticides, we strive to preserve and restore our land for future generations. We take great care to minimize runoff and never allow pollutants to enter our ecosystem. Our goal is to cultivate in harmony with nature and leave the land better than we found it.
Harvest
We personally tend to each grapevine and carefully handpick the fruit when it reaches peak ripeness, determined by ideal Brix and acid levels. During harvest season, we are joined by Cesar and his small team of seven others who assist with the overnight harvest of the 3,430 plants.
Grape Crush
Once the fruit is harvested, it is taken to a custom crush facility. The juice intended for our rosé wine is crushed and almost immediately placed into stainless steel tanks. In contrast, the Malbec red wine juice and skins are kept together to extract maximum flavor and color.
Fermentation
After crushing, the next step in our winemaking process is primary fermentation, also known as alcoholic fermentation, which takes place in stainless steel tanks. This crucial step typically lasts around two weeks until the wine has fermented to dryness. For our Malbec red wine, the juice and skins of the grapes remain together in the tank during this process to maximize flavor and tannin extraction.
On the other hand, our rosé wine is pressed almost immediately after crushing and the juice is fermented without the skins, allowing for a lighter, refreshing taste.
Once primary fermentation is complete, our Malbec red wine undergoes malolactic fermentation, a natural process in which tart malic acid in the wine is transformed into a smoother lactic acid. This step helps to enhance the wine’s flavor and texture, resulting in a truly exceptional product.
Aging and Bottling
Our rosé wine is bottled 4-6 months after fermentation and made available for sale. In contrast, our Malbec red wine requires aging to achieve its full potential. We age our Malbec in both new and neutral oak barrels for approximately 14 months, carefully monitoring the process. The wine is then bottled and ready to be enjoyed by wine enthusiasts.
